Recipe: Bourbon Peach Cobbler

Yield: 8-10

Ingredients

  • Filling:
  • - 6 large peaches, sliced
  • - 1 C blueberries
  • - 1/2 C bourbon
  • - 1/4 C sugar
  • - 2 T cornstarch
  • - 2 t cinnamon
  • - 1/2 t vanilla extract
  • - juice of half a small lemon
  • Topping:
  • - 1 C flour
  • - 1/2 C rolled oats
  • - 1/2 C sugar
  • - 1/2 t salt
  • - 3/4 C unsalted butter, small cubes
  • - 2 T heavy cream

Instructions

Preheat your Yoder Smokers YS640 to 400ºF. Combine the filling ingredients in a bowl and toss to distribute evenly. Set aside.

Make the topping: In a large bowl, mix topping ingredients until all ingredients are incorporated. Dump filling into a Lodge Logic 12” Cast Iron Skillet. Crumble the topping over the filling.

Bake until topping is golden brown and filling is thick and bubbling, about 1 hour. Serve warm with vanilla yogurt or ice cream.
