Easy, cheesy, beefy enchilada dip goodness! And it’s super simple!
Ground beef, onions and seasoning in the skillet.
A healthy dose of this delicious enchilada sauce! Top it off with cheese, and that’s it!
- 1.5 lb ground beef
- 1/2 large yellow onion, diced
- 2 cloves garlic, minced
- Cattleman’s Grill 8 Second Ride Carne Asada Seasoning
- 1 jar 505 Southwestern Red Chile Enchilada Sauce
- 8 oz sharp cheddar cheese, grated
- 4 oz pepper jack cheese, grated
Preheat your Yoder Smokers YS640 to 400ºF. Place a Lodge Logic 10” cast iron skillet in the cooker to preheat, as well. When the pan is hot, add a little oil to the pan, then the beef and onions. Season with 1-2 tablespoons of Cattleman’s Grill 8 Second Ride Carne Asada Seasoning, more for extra heat.
When the meat is browned and onions are softened, add the garlic and 505 Southwestern Red Chile Enchilada Sauce. Cook for about two minutes, then add the cheeses. Close the lid of the cooker and let the cheeses melt, 5-10 minutes.
Serve with tortilla chips.
