We had a blast as usual at our cooking classes this past weekend! People from all over attended these classes to learn from the man himself, Pitmaster Andy Groneman (shown above showing off the Victorinox 12″ slicing knife) of Smoke on Wheels Competition BBQ.
On Friday evening, Andy continued our crowd pleasing “Master the Grill” series. We cooked up Steak Spiedini, Mais Pizza (with the help of our trusty Big Green Egg Pizza Peel), smoked up some stuff sausage fatties (picture above), and baked our famous blueberry slump cake! The class was silenced by the food, and was able to ask questions about how they would cook these dishes at home on their own cookers. We stayed late into the evening chatting around the Yoder Smokers YS640s, discussing our best tips and techniques.
On Saturday morning they lined up to learn how to season and cook chicken every way imaginable. From smoked chicken to classic wings, we did it all. With this single two-hour lesson, this class went home with four chicken recipes that they can use for any type of gathering, giving their families new twists on an old favorite.
Finally, Saturday afternoon, Andy wowed the crowd with his famous Ribs Five Ways class! The class learned the secrets that not only won Andy a perfect 180 score in ribs to start the 2012 Competition BBQ season off with a bang, but has wowed judges all over the country season after season. From how to properly pick and trim the meat to how to season the ribs up, we covered it all.
